The principle of suckler farming is to raise cows to produce calves for meat. The milk is therefore intended for the calves.
Some breeders specialise in "birth" of animals, others in "finishing or fattening", and many breeders practice both jobs (breeder and fattener).
Several products are produced from suckler farming:
- Calves are mainly reared to give meat from young or young bulls, fattened up to about 18 months of age.
- Heifers (young female animals) are fattened up to an average age of three years.
- Calves are "reared under the mother": they are fattened on milk to produce white meat at the latest at 8 months
- Cull cows (which will no longer produce calves) are fattened for consumption.
57,000 farms in France have at least 5 suckler cows and the suckler cow herd was 3,826,000 animals in 2020. This herd is mainly located around the Massif Central (Nouvelle-Aquitaine and Auvergne-Rhône-Alpes regions).
